Creamy Garlic Parmesan Risotto

1 ½ cups Arborio rice

4 cups low-sodium chicken or vegetable broth

1 cup dry white wine (like Sauvignon Blanc)

2 tablespoons unsalted butter

1 tablespoon olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup grated Parmesan cheese

½ cup heavy cream

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth: In a medium saucepan, bring the chicken or vegetable broth to a gentle simmer over low heat. Keep it warm throughout the cooking process.

    Sauté Aromatics: In a large saucepan or skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Toast the Rice: Add the Arborio rice to the pan and stir continuously for about 2-3 minutes, allowing the rice to lightly toast and absorb the flavors. The edges of the rice should look translucent.

        Deglaze with Wine: Pour in the dry white wine and cook, stirring often, until the wine is mostly absorbed by the rice.

          Add Broth Gradually: Begin adding the warm broth to the rice mixture, one ladle at a time. Stir frequently and wait until the liquid is mostly absorbed before adding more broth. This process should take about 20-25 minutes, and the rice should be creamy and al dente.

            Incorporate Cream and Cheese: Once the rice is cooked to your desired consistency, reduce the heat to low. Stir in the heavy cream and the remaining 1 tablespoon of butter. Gradually mix in the grated Parmesan cheese, allowing it to melt and create a creamy texture. Season with salt and pepper to taste.
