Creamy Greek Pasta Salad

8 oz (225g) rotini or penne pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1 cup Kalamata olives, pitted and halved

1/2 red onion, finely chopped

1 cup crumbled feta cheese

1/2 cup Greek yogurt

1/4 cup mayonnaise

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley or dill, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta down. Set aside.

    Prepare the Vegetables: While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, chopped red onion, and halved olives.

      Make the Dressing: In a separate small bowl, whisk together the Greek yogurt, mayonnaise, olive oil, red wine vinegar, lemon juice, and dried oregano until well combined. Season generously with salt and pepper to taste.

        Combine Ingredients: Once the pasta has cooled, add it to the vegetable mixture. Pour the dressing over the pasta and vegetables, and gently toss everything together until well coated.

          Add Feta: Gently fold in the crumbled feta cheese, being careful not to break it too much. Adjust seasoning with additional salt and pepper, if necessary.

            Chill & Serve: Cover the salad with plastic wrap or a lid, and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, give it a gentle toss and garnish with chopped parsley or dill.
