Creamy Lemon Dill Salmon Pasta

8 oz fettuccine pasta

2 salmon fillets (about 6 oz each)

2 tbsp olive oil

Salt and pepper to taste

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1 tbsp Dijon mustard

2 tbsp capers, rinsed and drained

1/4 cup fresh dill, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese

1 garlic clove, minced

1/2 cup cherry tomatoes, halved (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Salmon: While the pasta is cooking, season the salmon fillets with olive oil, salt, and pepper. In a large skillet over medium heat, cook the salmon skin-side down for about 4-5 minutes, then flip and cook for another 3-4 minutes, or until it flakes easily with a fork. Remove the salmon from the skillet and let it cool slightly before flaking it into bite-sized pieces.

      Make the Creamy Sauce: In the same skillet, lower the heat and add the minced garlic. Sauté for about 1 minute until fragrant, then pour in the heavy cream, stirring to combine. Add the lemon zest, lemon juice, Dijon mustard, and capers. Let the sauce simmer for about 3-4 minutes, allowing it to thicken slightly.

        Combine Everything: Add the cooked pasta directly to the sauce and toss to coat. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired creaminess.
