Creamy Lemon Ricotta Zoodles

4 medium zucchini (about 1 pound)

1 cup fresh ricotta cheese

1 large lemon (zest and juice)

2 tablespoons olive oil

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

1/4 teaspoon red pepper flakes (optional)

Prepare the Zoodles: Using a spiralizer, create zucchini noodles (zoodles) from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set the zoodles aside.

    Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to let it brown.

      Combine Ricotta and Lemon: In a mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, and grated Parmesan cheese. Stir until smooth and creamy. Season with salt and pepper to taste. If you like a bit of heat, add the red pepper flakes.

        Cook the Zoodles: Add the zoodles to the skillet with the sautéed garlic and toss them gently to combine. Cook for 2-3 minutes until the zoodles are just tender. Be sure not to overcook them; you want them to retain some crunch.

          Combine Everything: Reduce the heat to low and add the creamy ricotta mixture to the skillet. Toss everything together, making sure the zoodles are well coated with the sauce.

            Serve: Plate the creamy lemon ricotta zoodles, garnishing with fresh basil leaves on top. Drizzle a little extra olive oil if desired and enjoy immediately!
