1 medium head of cauliflower, chopped into florets

1 large onion, chopped

2 cloves of garlic, minced

4 cups vegetable broth (or chicken broth)

1 cup coconut milk (or heavy cream for a non-vegan option)

3 tablespoons pure maple syrup

2 tablespoons olive oil

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Optional: toasted pumpkin seeds and chives for garnishing

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until translucent. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
