Creamy Miso Mushroom Pasta

8 oz (225 g) spaghetti or fettuccine

1 cup (150 g) cremini mushrooms, sliced

1 cup (150 g) shiitake mushrooms, sliced

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon miso paste (white or yellow)

1 cup (240 ml) heavy cream

1/2 cup (120 ml) vegetable broth

1 tablespoon soy sauce

1 teaspoon grated fresh ginger

1 teaspoon sesame oil

1/4 teaspoon black pepper

Salt, to taste

1/4 cup (25 g) grated Parmesan cheese (optional)

Fresh chives or parsley, chopped (for garnish)

Toasted sesame seeds (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta. Set aside.

    Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add sliced cremini and shiitake mushrooms. Sauté for about 5-7 minutes until they are golden brown and tender.

      Flavor the Base: Add minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes until fragrant.

        Make the Sauce: Lower the heat and stir in the miso paste, mixing it well with the mushrooms. Gradually pour in the heavy cream and vegetable broth, stirring continuously until the sauce is smooth.

          Season the Sauce: Add soy sauce, sesame oil, black pepper, and salt to taste. Let the sauce simmer for about 3-5 minutes to thicken slightly.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it in the creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

              Cheese it Up: If using, stir in the grated Parmesan cheese until well incorporated and melted.
