Ingredients

2 large chicken breasts (boneless and skinless)

1 cup basil pesto (store-bought or homemade)

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup spinach leaves, fresh

1 cup mozzarella cheese, shredded

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh basil leaves for garnish

1 teaspoon red pepper flakes (optional, for heat)

1 cup cooked pasta (optional, for serving)

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and half of the minced garlic. In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

Create the Creamy Sauce: In the same skillet, add the remaining minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and basil pesto, stirring well to combine. Allow the sauce to reduce slightly, simmering for about 2-3 minutes.

Add Vegetables: Stir in the halved cherry tomatoes and fresh spinach leaves. Cook for another 2-3 minutes until the spinach wilts and the tomatoes soften.

Combine with Chicken: Return the cooked chicken breasts to the skillet, spooning the creamy sauce over them. Sprinkle the shredded mozzarella cheese on top, cover, and let it cook for an additional 5 minutes on low heat, allowing the cheese to melt and the flavors to meld together.

Serve: If desired, serve over cooked pasta for a heartier meal. Garnish with fresh basil leaves and sprinkle red pepper flakes for some heat. Enjoy your creamy, flavorful one-pan delight!
