Creamy One-Pot Chicken and Spinach Pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs (cut into bite-sized pieces)

1 medium onion (finely chopped)

3 cloves garlic (minced)

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

4 cups vegetable or chicken broth

12 ounces pasta (penne or fusilli works well)

2 cups fresh spinach (washed and roughly chopped)

1 cup heavy cream

½ cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish (optional)

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken pieces and season with salt, pepper, Italian seasoning, and red pepper flakes. Cook until the chicken is browned and cooked through (about 6-8 minutes). Remove the chicken from the pot and set it aside.

    Sauté Aromatics: In the same pot, add the chopped onion and cook until translucent (about 3-4 minutes). Add the minced garlic and cook for another 1-2 minutes until fragrant.

      Add Broth and Pasta: Pour in the broth and bring it to a simmer. Once simmering, add the pasta and stir well. Cook according to package instructions until the pasta is al dente, stirring occasionally to prevent sticking (approximately 10-12 minutes).

        Stir in Spinach and Chicken: Once the pasta is cooked, add the chopped spinach and cooked chicken back to the pot. Stir until the spinach wilts.

          Make it Creamy: Reduce the heat to low and pour in the heavy cream, mixing until well combined. Stir in the Parmesan cheese and adjust seasoning with additional salt and pepper as needed.

            Serve: Remove from heat and let it sit for a couple of minutes to thicken slightly. Serve the creamy pasta in bowls, topped with extra Parmesan cheese and fresh basil leaves if desired.
