Ingredients

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

12 oz (340g) penne pasta

4 cups low-sodium chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

5 cloves garlic, minced

1 small onion, finely chopped

2 tablespoons olive oil

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large pot or deep skillet, heat the olive oil over medium heat. Add the diced chicken pieces, season with salt and pepper, and sauté until golden brown on all sides and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

Cook the Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, or until the onion becomes translucent and fragrant.

Add Pasta and Broth: Pour in the chicken broth and bring to a gentle boil. Add the penne pasta, Italian seasoning, and red pepper flakes (if using). Stir to combine.

Simmer the Pasta: Reduce the heat to low, cover the pot, and let it simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and most of the broth is absorbed.

Create the Creamy Sauce: Once the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese is melted and the sauce becomes creamy. If the pasta seems too thick, you can add a splash more chicken broth or cream to reach your desired consistency.

Combine and Finish: Return the cooked chicken to the pot, and simmer for an additional 2-3 minutes to heat through and combine all flavors. Taste and adjust seasoning with more salt, pepper, or Parmesan as needed.

Serve: Garnish with freshly chopped parsley before serving. Enjoy your creamy, garlicky masterpiece straight from the pot!
