Ingredients

1 cup orzo pasta

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup asparagus, trimmed and cut into 1-inch pieces

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Instructions

Cook the Orzo: In a large pot, bring the chicken broth to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes. Stir occasionally to prevent sticking.

Prepare the Chicken: While the orzo is cooking, heat the olive oil in a large skillet over medium heat. Season the chicken pieces with salt, pepper, and onion powder. Add the chicken to the skillet and cook for about 5-7 minutes, or until browned and cooked through. Remove from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the minced garlic and asparagus. Sauté for about 3-4 minutes, or until the asparagus is tender yet still crisp.

Combine with Cream: Lower the heat and add the heavy cream to the skillet, stirring to combine with the garlic and asparagus. Bring to a simmer.

Add Cheese and Orzo: Gradually whisk in the Parmesan cheese until melted and creamy. Drain the cooked orzo and add it to the skillet along with the cooked chicken. Stir everything together until combined and heated through.

Season and Serve: Taste and adjust seasoning with more salt, pepper, or Italian seasoning if desired. Garnish with freshly chopped parsley before serving.
