Creamy Pesto Pasta Salad

12 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup grated Parmesan cheese

1 cup fresh basil leaves

1/2 cup mayonnaise

1/2 cup Greek yogurt

1/3 cup pesto sauce

1 tablespoon lemon juice

Salt and pepper to taste

Optional: Crushed red pepper flakes for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.

    Prepare the Dressing: In a medium bowl, combine the mayonnaise, Greek yogurt, pesto sauce, lemon juice, salt, and pepper. Mix until smooth and creamy. Adjust seasoning to taste if necessary.

      Mix the Salad: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, and fresh basil leaves. Pour the creamy pesto dressing over the vegetable and pasta mixture.

        Toss to Combine: Gently toss everything together until the pasta and vegetables are evenly coated in the dressing. If desired, you can add more pesto for extra flavor.

          Chill the Salad: Cover the mixing bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to let the flavors meld.

            Serve: Before serving, sprinkle grated Parmesan cheese on top and, if desired, add crushed red pepper flakes for a bit of heat. Serve cold or at room temperature.
