2 cups pumpkin puree (fresh or canned)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon nutmeg

1 teaspoon cinnamon

Salt and pepper to taste

12 oz fettuccine or pasta of choice

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.

      Create the Base: Stir in the pumpkin puree, heavy cream, onion powder, nutmeg, and cinnamon. Cook, stirring frequently, until the mixture is heated through and begins to bubble gently.

        Add the Cheese: Gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add a little bit of the reserved pasta water until you reach your desired consistency.

          Season: Taste the sauce and season with salt and pepper as needed. If you prefer a little kick, you can also add a pinch of cayenne pepper or red pepper flakes at this stage.

            Combine: Add the cooked pasta to the sauce, tossing until the fettuccine is well coated. If the pasta absorbs too much of the sauce, add more reserved pasta water as necessary.
