8 oz fresh ricotta cheese

2 cups fresh spinach leaves, chopped

1 garlic clove, minced

1 tablespoon olive oil

1 tablespoon lemon juice

1 tablespoon fresh basil, chopped (plus extra for garnish)

Salt and pepper to taste

4 slices of rustic bread (like sourdough or ciabatta)

1/4 cup grated Parmesan cheese (optional)

Red pepper flakes (optional, for a kick)

Sauté the Spinach: In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and let cool slightly.

    Mix the Ricotta: In a mixing bowl, combine the ricotta cheese, lemon juice, and chopped basil. Stir in the cooled sautéed spinach, and season with salt and pepper to taste. For a cheesy twist, add in the grated Parmesan cheese if desired.
