Creamy Roasted Cauliflower Dip

Ingredients
  

1 large head of cauliflower, chopped into florets

4 cloves of garlic, unpeeled

2 tablespoons olive oil, divided

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cream cheese, softened

1/4 cup sour cream

1/2 cup grated Parmesan cheese

2 tablespoons fresh chives, chopped (for garnish)

Fresh veggies or pita chips for serving

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, toss the cauliflower florets and unpeeled garlic cloves with 1 tablespoon of olive oil, smoked paprika, salt, and black pepper until evenly coated.

      Spread the cauliflower and garlic on a baking sheet in a single layer and roast for 25-30 minutes, until the cauliflower is tender and slightly browned, stirring halfway through.

        Remove the baking sheet from the oven and let it cool for a few minutes. Carefully peel the garlic cloves and set aside.

          In a food processor, combine the roasted cauliflower, peeled garlic, cream cheese, sour cream, and Parmesan cheese. Blend until smooth and creamy, scraping down the sides as needed.

            Taste and adjust seasoning if necessary. If the dip is too thick, you can add a tablespoon of water or more sour cream to reach your desired consistency.

              Transfer the dip into a serving bowl, sprinkle with fresh chives, and drizzle with a little olive oil for extra richness.

                Serve warm or at room temperature with fresh veggies or pita chips for dipping. Enjoy your creamy, flavorful dip!
