4 cups fresh corn kernels (about 6 ears, or use frozen if preferred)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded Monterey Jack cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh cilantro, chopped (plus more for garnish)

1-2 jalapeños, diced (seeds removed for less heat)

1/2 cup diced red onion

Tortilla chips or fresh veggies for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn: In a mixing bowl, toss the corn kernels with the olive oil, smoked paprika, garlic powder, salt, and pepper. Spread the corn mixture evenly on a baking sheet and roast in the preheated oven for 20-25 minutes or until the corn is slightly charred and golden brown. Stir halfway through for even roasting.

      Prepare the Dip Base: In a large mixing bowl, combine the softened cream cheese, sour cream, Monterey Jack cheese, grated Parmesan, chopped cilantro, diced jalapeños, and diced red onion. Mix until well combined and creamy.

        Add the Corn: Once the corn is roasted, let it cool slightly, then fold it into the cheese mixture. Stir until everything is evenly combined.

          Bake the Dip: Transfer the mixture to a baking dish. Smooth the top with a spatula. If desired, sprinkle additional cheese on top (about 1/2 cup Monterey Jack or a mixture of cheeses). Bake in the oven for 20-25 minutes, or until the dip is bubbling and the top is golden brown.
