Creamy Spinach and Feta Stuffed Shells

12 large jumbo pasta shells

2 cups fresh spinach (chopped)

1 cup ricotta cheese

1 cup feta cheese (crumbled)

1/2 cup mozzarella cheese (shredded)

1/4 cup grated Parmesan cheese

1 egg (beaten)

2 cloves garlic (minced)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups marinara sauce

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: In a large pot of boiling salted water, cook the jumbo shells according to the package instructions, until al dente. Drain and set aside to cool slightly.

      Prepare Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, feta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, oregano, red pepper flakes, salt, and pepper. Mix well until all ingredients are evenly blended.

        Stuff Shells: Spread 1 cup of marinara sauce on the bottom of a baking dish. Using a spoon, fill each jumbo shell with the creamy spinach and feta mixture. Arrange the stuffed shells in the baking dish.

          Add Sauce: Pour the remaining marinara sauce over the stuffed shells, spreading it evenly. Sprinkle the rest of the mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
