12 oz (340g) pasta of your choice (fettuccine or penne recommended)

2 cups fresh spinach, roughly chopped

1/2 cup sun-dried tomatoes packed in oil, drained and chopped

1 tablespoon olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Red pepper flakes (optional for a bit of heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes, allowing their flavors to infuse the oil.

        Create the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Bring the mixture to a simmer, then add the grated Parmesan cheese and Italian seasoning. Stir continuously until the cheese has melted and the sauce is creamy. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.
