Creamy Spinach Feta Pasta

8 oz (225g) pasta of your choice (penne or fusilli work great)

2 cups fresh spinach, roughly chopped

1 cup crumbled feta cheese

1 cup heavy cream

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

Fresh basil leaves (for garnish, optional)

Juice of 1 lemon

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Add the Spinach: Stir in the chopped spinach and cook until wilted, approximately 3-4 minutes.

        Make the Creamy Sauce: Lower the heat and add the heavy cream to the skillet. Stir in the crumbled feta cheese and red pepper flakes. Allow the mixture to simmer gently for about 5 minutes, stirring frequently until the feta begins to melt and the sauce thickens slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet along with a splash of the reserved pasta water. Toss everything together until the pasta is well coated in the creamy sauce. If it seems too thick, add more pasta water until you reach the desired consistency.

            Season: Squeeze the lemon juice over the pasta and season with salt and pepper to taste. Mix well.

              Serve: Divide the creamy spinach feta pasta into bowls. Top with grated Parmesan cheese and garnish with fresh basil leaves if desired.
