4 medium sweet potatoes (about 2 pounds), peeled and cubed

1/2 cup unsweetened almond milk (or regular milk)

1/4 cup maple syrup

1/4 cup brown sugar

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup mini marshmallows (or vegan marshmallows)

1/2 cup crushed pecans or walnuts (optional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook Sweet Potatoes: Place the sweet potato cubes into a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly.
