Creamy Taco Pasta with Ground Turkey

8 oz (about 225g) of elbow macaroni or your choice of pasta

1 lb (450g) ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 packet (1 oz) taco seasoning

1 can (10 oz) diced tomatoes with green chilies

1 cup chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Turkey: In a large skillet, heat olive oil over medium heat. Add diced onions and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds until fragrant.

      Brown the Ground Turkey: Increase the heat to medium-high. Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

        Add Flavor: Sprinkle the taco seasoning over the browned turkey, stirring to combine well. Pour in the diced tomatoes (with juices) and chicken broth. Bring the mixture to a simmer.

          Create the Creamy Sauce: Reduce the heat to low, and stir in the heavy cream. Allow it to simmer gently for about 2-3 minutes to thicken slightly.

            Combine Ingredients: Add the cooked pasta, black beans, and corn to the skillet. Stir everything together until well combined and heated through.

              Cheesy Finish: Gradually stir in the shredded cheddar cheese, allowing it to melt into the sauce. Taste and adjust seasoning with salt and pepper, as needed.
