8 oz (225g) penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz/400g) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped (plus extra for garnish)

Optional: Red pepper flakes for a hint of spice

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant; be careful not to burn it!

      Add Tomatoes: Pour in the crushed tomatoes and stir in the dried oregano and optional sugar. Season with salt and pepper. Let it simmer for about 5 minutes, allowing the flavors to meld together.

        Creamy Addition: Reduce the heat to low and slowly pour in the heavy cream, stirring continuously. Allow the sauce to cook for an additional 3-5 minutes until it thickens slightly.

          Mix Pasta and Sauce: Add the cooked penne directly into the skillet with the creamy tomato sauce. Toss to combine, adding reserved pasta water a little at a time if the sauce is too thick.

            Cheese & Basil: Remove from heat and stir in the grated Parmesan cheese and chopped fresh basil, mixing until the cheese melts into the sauce.
