Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cans (14.5 oz each) diced tomatoes (preferably fire-roasted)

1 cup vegetable broth or chicken broth

1 teaspoon sugar (to balance acidity)

Salt and pepper, to taste

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup fresh basil leaves, chopped (plus extra for garnish)

½ teaspoon crushed red pepper flakes (optional, for a bit of heat)

1 tablespoon balsamic vinegar (optional, for depth of flavor)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent. Stir in the minced garlic and cook for another minute until fragrant.

Add Tomatoes and Broth: Pour in the canned diced tomatoes (with their juices) and the vegetable or chicken broth. Add the sugar, salt, pepper, and crushed red pepper flakes if using. Stir to combine.

Simmer: Bring the mixture to a gentle simmer and let it cook for about 20 minutes, allowing the flavors to meld together.

Blend the Soup: Using an immersion blender, carefully puree the soup until smooth and creamy. You can also transfer the soup to a blender in batches if you don't have an immersion blender.

Incorporate Cream and Basil: Return the pureed soup to the pot (if using a blender). Stir in the heavy cream and chopped basil leaves. Allow the soup to heat through for about 5 minutes, but do not let it boil. Taste and adjust seasoning if needed, adding balsamic vinegar for added depth if desired.

Serve: Ladle the soup into bowls and garnish with extra basil leaves. For an added touch, drizzle a little olive oil on top or sprinkle with freshly cracked black pepper.
