2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 can (28 ounces) crushed tomatoes

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

1 package (9 ounces) cheese tortellini (fresh or frozen)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until softened and translucent. Stir in the minced garlic, dried oregano, and dried basil. Cook for an additional minute, until fragrant.
