12 oz fresh cheese tortellini

2 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup grated Parmesan cheese

1 cup heavy cream

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Zest of 1 lemon

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package directions until they float to the top (about 3-5 minutes). Drain and set aside.

    Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds). Add the chopped spinach and cook until wilted, about 2-3 minutes.

      Make the Creamy Sauce: Lower the heat and stir in the ricotta cheese, heavy cream, grated Parmesan cheese, dried basil, and red pepper flakes (if using). Mix until well combined and creamy. Season with salt and pepper to taste.

        Combine Tortellini and Sauce: Gently fold the cooked tortellini into the creamy sauce, ensuring each piece is well coated. Cook on low heat for an additional 2-3 minutes to warm everything through.
