12 oz (340g) elbow macaroni

1 can (12 oz) tuna in water, drained

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed)

1 cup sour cream

1 cup cream of mushroom soup (or homemade)

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon salt (to taste)

½ teaspoon red pepper flakes (optional for a kick)

1 tablespoon olive oil

½ cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring water to a boil and cook the elbow macaroni according to package instructions until al dente (about 8-10 minutes). Drain and set aside.

      Sauté the Vegetables: In a medium skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional minute, until fragrant. Remove from heat.

        Mix the Casserole Base: In a large mixing bowl, combine the drained tuna, chopped spinach, sour cream, cream of mushroom soup, shredded cheddar cheese, grated Parmesan cheese, oregano, black pepper, salt, and red pepper flakes (if using). Stir in the sautéed onion and garlic.

          Combine with Pasta: Add the cooked macaroni to the mixture and stir until everything is well mixed and coated.

            Prepare for Baking: Lightly grease a 9x13 inch (3-quart) baking dish, then pour the mixture into the dish, spreading it evenly.
