Creamy Tuscan White Bean Pasta

12 oz pasta (fettuccine, penne, or your choice)

1 can (15 oz) cannellini beans, drained and rinsed

2 cups fresh spinach

1/2 cup sun-dried tomatoes, chopped

4 cloves garlic, minced

1 medium onion, diced

1 cup vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1/2 cup freshly grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Create the Creamy Sauce: Add the sun-dried tomatoes and Italian seasoning to the skillet, cooking for 2 minutes. Then, pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 5 minutes.

        Add Cream and Beans: Lower the heat and stir in the heavy cream and cannellini beans. Mix well and let it simmer for another 3-4 minutes until the cream thickens slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss it gently with the creamy sauce. If the sauce looks too thick, gradually mix in some reserved pasta water until desired consistency is reached.

            Add Spinach: Fold in the fresh spinach and cook for an additional 2 minutes, just until the spinach wilts.

              Cheese It Up: Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
