Creamy Tzatziki Chicken Bowls

1 cup Greek yogurt

1 medium cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

For the Chicken:

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For the Bowls:

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 avocado, diced

Fresh parsley or cilantro for garnish

Instructions
 

Prepare the Tzatziki Sauce:

    - In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, salt, and pepper.

      - Mix well until all ingredients are combined. Adjust seasoning to taste. Refrigerate for at least 30 minutes for the flavors to meld.

        Cook the Chicken:

          - Preheat a grill or skillet over medium-high heat.

            - In a small bowl, mix olive oil, paprika, garlic powder, onion powder, salt, and pepper.

              - Brush the spice mixture over both sides of the chicken breasts.
