Ingredients

2 cups fresh spinach, chopped

1 can (15 oz) white beans (cannellini or navy), drained and rinsed

1 medium onion, diced

3 cloves garlic, minced

2 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer flavor)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh lemon juice, for serving

Crusty bread, for serving (optional)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Add Beans and Spices: Add the drained white beans, dried thyme, and smoked paprika to the onion mixture. Stir to combine, letting the spices toast for a minute or so.

Pour in Broth: Slowly add the vegetable broth, bringing the mixture to a gentle simmer. Allow it to cook for about 10 minutes, allowing the flavors to meld.

Blend Smooth: Using an immersion blender, blend the soup until smooth and creamy, or carefully transfer to a regular blender in batches. If you prefer a bit of texture, blend only half of the soup and leave the rest chunky.

Incorporate Spinach: Return the soup to the pot (if using a regular blender). Stir in the chopped spinach and coconut milk. Let it cook on low heat for an additional 5-7 minutes, until the spinach is wilted and the soup is heated through.

Season to Taste: Taste and adjust the seasoning with salt, pepper, and a squeeze of fresh lemon juice for a bright finish.

Serve and Enjoy: Ladle the soup into bowls and serve hot, with crusty bread on the side if desired. Garnish with extra spinach or a drizzle of olive oil for that extra touch!
