4 medium zucchinis (spiralized into noodles)

1 tablespoon olive oil

2 cloves garlic, minced

1 cup raw cashews (soaked for at least 2 hours)

3/4 cup unsweetened almond milk (or any milk of your choice)

1/4 cup nutritional yeast (for cheesy flavor)

2 tablespoons lemon juice

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated vegan or regular Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Zucchini Noodles: Using a spiralizer, create zucchini noodles from the zucchinis. Set aside in a colander to drain excess moisture.

    Make the Alfredo Sauce:

      - In a blender, combine the soaked cashews, almond milk, nutritional yeast, lemon juice, minced garlic, garlic powder, onion powder, and a pinch of salt and pepper.

        - Blend on high until completely smooth and creamy. This may take a minute or two; scrape down the sides as necessary.

          Cook the Zucchini Noodles:

            - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

              - Add the drained zucchini noodles to the skillet and cook for 3-5 minutes, stirring gently until the noodles are heated through but still have some crunch. Avoid overcooking to preserve texture.
