Ingredients

2 medium zucchinis

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

½ tsp onion powder

1 tsp paprika

½ tsp salt (adjust to taste)

¼ tsp black pepper

1 large egg (optional for binding)

Olive oil spray

Instructions

Prep the Zucchini: Wash and dry the zucchinis thoroughly. Slice them into thin rounds, about ¼ inch thick. For the crispiest chips, try to keep the slices uniform in size.

Seasoning Mix: In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to evenly distribute the seasonings.

Optional Egg Wash: If you’re using an egg for better adhesion, beat the egg in another bowl. Dip each zucchini slice in the egg, allowing any excess to drip off. For a lighter option, skip this step and directly coat them with the breadcrumb mixture.

Coat the Zucchini: Dredge each zucchini round into the breadcrumb mixture, ensuring they are fully coated. Press gently to help the mixture adhere if not using the egg wash.

Preheat the Air Fryer: Preheat the air fryer to 380°F (193°C) for about 3-5 minutes. This step helps to achieve a nice crisp on the chips.

Arrange in Air Fryer: Lightly spray the air fryer basket with olive oil. Place the coated zucchini chips in a single layer in the basket, ensuring they aren’t overlapping (work in batches if necessary).

Air Fry: Spray the top of the zucchini chips lightly with olive oil. Cook the chips at 380°F (193°C) for 10-12 minutes, shaking the basket halfway through for even cooking. Keep an eye on them in the last few minutes, as cooking times may vary depending on the air fryer.

Cool and Serve: Once crispy and golden, carefully remove the zucchini chips from the air fryer and let them cool on a wire rack for a few minutes. This helps maintain crunchiness. Serve warm as a snack or side dish!
