1 lb ground beef (or turkey)

1 packet taco seasoning (or homemade with cumin, chili powder, garlic powder, onion powder, and salt)

12 small corn tortillas

1 cup shredded cheddar cheese

1 medium onion, finely chopped

1 medium bell pepper, diced

1 cup lettuce, shredded

1 medium tomato, diced

½ cup sour cream

½ cup salsa

1 cup vegetable oil (for frying)

Fresh cilantro for garnish (optional)

Lime wedges for serving

Prepare the Filling: In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened (about 5 minutes). Add the ground beef (or turkey), breaking it apart with a spatula. Cook until browned and cooked through (around 7-10 minutes). Drain any excess fat if necessary, then stir in the taco seasoning and a splash of water. Allow to simmer for an additional 5 minutes, stirring frequently. Set aside to cool slightly.

    Crisp the Tortillas: In a deep skillet or a sturdy pot, heat the vegetable oil over medium-high heat. Once hot, carefully add one corn tortilla at a time. Fry for about 30 seconds on each side until golden and crisp, then use tongs to remove and drain on paper towels. Repeat until all tortillas are fried.
