While the avocados themselves are packed with healthy fats, a little extra oil helps to enhance the crispiness of the breading during the baking process. You can either spray or drizzle oil on the coated fries, but here’s how to maximize its effectiveness:

Ingredients

2 ripe avocados

1 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese (optional)

Cooking spray or olive oil for drizzling

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to help the fries crisp up.

Prepare Avocados: Cut the avocados in half, remove the pit, and carefully scoop the flesh out. Slice each avocado half into wedges (about 6-8 wedges per avocado).

Set Up Breading Station: In three separate shallow bowls, prepare your breading station:

        - In the first bowl, place the flour.

          - In the second bowl, beat the eggs and mix in garlic powder, smoked paprika, salt, and black pepper.

            - In the third bowl, combine the panko breadcrumbs and grating Parmesan cheese (if using).

Bread the Avocado Wedges: Start by dredging each avocado wedge in flour, shaking off any excess. Then dip it into the egg mixture, ensuring it is fully coated. Finally, roll it in the panko mixture, pressing gently to ensure the crumbs stick well.

Arrange on Baking Sheet: Place the breaded avocado fries in a single layer on the prepared baking sheet. Make sure they have some space between them for maximum crispiness.

Spray or Drizzle: Lightly spray the tops of the avocado fries with cooking spray or drizzle with a little olive oil for extra crispiness.

Bake: Bake in the preheated oven for 15-20 minutes or until golden brown and crispy, turning halfway through for even cooking.

Serve: Once cooked, remove from the oven and let cool for a few minutes. Serve hot with your choice of dipping sauce (like a spicy mayo, ranch, or salsa). Enjoy your crispy baked avocado fries!
