4 large flour tortillas

1 lb ground beef (or substitute with ground turkey or plant-based protein)

1 packet taco seasoning (or homemade: chili powder, cumin, garlic powder, onion powder, paprika, salt)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes

1 avocado, diced

1 cup shredded lettuce

½ cup sour cream (or plain Greek yogurt)

½ cup salsa (mild or spicy, as desired)

Fresh cilantro, for garnish

Cooking spray or olive oil for brushing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Mold the Tortillas: Gently press each tortilla into a muffin tin, allowing for the tortilla to create a bowl shape. You can use a small bowl or an oven-safe dish to help shape them if needed.

      Bake the Tortilla Bowls: Lightly spray the tortilla bowls with cooking spray or brush with olive oil to help them crisp up. Bake in the preheated oven for 10-12 minutes or until golden brown and crisp. Remove from the oven and let cool slightly.

        Cook the Meat: In a skillet over medium heat, add the ground beef. Brown the meat for about 5-7 minutes, breaking it apart as it cooks. Drain excess fat if necessary, then stir in taco seasoning and follow the packet instructions or mix with a cup of water if using homemade seasoning.

          Add Beans and Corn: Stir in the black beans and corn into the cooked beef. Allow the mixture to heat through for an additional 2-3 minutes, stirring occasionally.

            Assemble the Bowls: Once the tortilla bowls are ready, fill each with a generous scoop of the beef and bean mixture. Top each filled bowl with diced tomatoes, shredded lettuce, avocado, and cheese.
