2 medium zucchinis

1 cup breadcrumbs (whole wheat or panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice them into fry-like strips about 1/4 inch thick. The key is to keep them even to ensure uniform cooking.

      Set Up Breading Station: In one bowl, whisk the eggs until well combined. In another large bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, salt, and black pepper.

        Coat the Zucchini Fries: Dip each zucchini strip into the egg mixture, allowing the excess to drip off, then transfer it to the breadcrumb mixture. Roll it around to coat completely, pressing gently so the breadcrumbs stick well.
