2 medium zucchini

1 cup breadcrumbs (panko or regular)

½ cup grated Parmesan cheese

2 large eggs

½ cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Olive oil spray (or a drizzle of olive oil)

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare Zucchini: Wash the zucchini and cut off the ends. Cut them into sticks about 1/4 inch thick for optimal crispiness.

      Set Up Breading Station:

        - In one shallow dish, place the flour seasoned with salt, pepper, garlic powder, onion powder, and paprika.

          - In a second dish, whisk the eggs until well beaten.

            - In a third dish, combine the breadcrumbs and Parmesan cheese, mixing well.

              Coat the Zucchini: Dip each zucchini stick first in the flour mixture, shaking off the excess. Then, dip it into the beaten eggs, followed by coating it in the breadcrumb mixture, pressing lightly to adhere the crumbs.

                Arrange on Baking Sheet: Place the coated zucchini fries in a single layer on the prepared baking sheet. Make sure they aren’t overcrowded to ensure crispiness.

                  Bake: Spray the tops lightly with olive oil or drizzle olive oil over them. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy. Flip them halfway through to ensure even cooking.
