1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup unsweetened plant-based milk (or regular milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko works great for extra crunch)

1 cup BBQ sauce (your favorite brand or homemade)

Olive oil spray for baking

Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Prepare the batter: In a large mixing bowl, combine flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Gradually whisk in the plant-based milk until smooth and well-combined.

      Bread the cauliflower: Place the breadcrumbs in a separate bowl. Dip each cauliflower floret into the batter, allowing the excess to drip off, then coat with breadcrumbs. Ensure each piece is evenly covered.

        Arrange on the baking sheet: Lay the breaded cauliflower bites in a single layer on the prepared baking sheet. Spray lightly with olive oil for a crispier finish.

          Bake the cauliflower: Place the baking sheet in the preheated oven and bake for 20-25 minutes, flipping halfway through, until the cauliflower bites are golden brown and crispy.

            Coat with BBQ sauce: In a large bowl, toss the crispy cauliflower bites with BBQ sauce until evenly coated. Return them to the baking sheet.

              Bake again: Bake for an additional 10 minutes to set the BBQ sauce and enhance the flavors.
