Ingredients

1 medium-sized head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (can substitute with almond flour for a gluten-free option)

1 cup water

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup panko breadcrumbs

½ cup barbecue sauce (homemade or store-bought)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: In a large bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually whisk in the water until you achieve a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off. Then, roll the battered florets in the panko breadcrumbs, making sure they're fully coated.

Arrange on Baking Sheet: Place the breaded cauliflower bites on the prepared baking sheet, making sure they are spread out evenly to allow for air circulation.

Bake the Bites: Bake in the preheated oven for about 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

Add the BBQ Sauce: Remove the cauliflower bites from the oven. In a mixing bowl, gently toss the crispy bites with the barbecue sauce until evenly coated.

Final Bake: Return the coated bites to the baking sheet and bake for an additional 5-10 minutes, allowing the barbecue sauce to caramelize slightly.

Serve: Once finished, take them out of the oven, garnish with chopped parsley if desired, and serve immediately with extra BBQ sauce or your favorite dipping sauce.
