Crispy BBQ Chicken Flatbread

1 lb (450g) boneless, skinless chicken breasts

1/2 cup BBQ sauce (your favorite brand or homemade)

2 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

4 large flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn (canned or frozen, thawed)

1/4 cup fresh cilantro, chopped

Optional: sliced jalapeños for heat

Marinate the Chicken: In a bowl, mix the olive oil, BBQ sauce, garlic powder, onion powder, salt, and pepper. Place the chicken breasts in the marinade, ensuring they're well coated. Allow them to marinate for at least 30 minutes (or up to 2 hours in the fridge for more intense flavor).

    Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Once hot, remove the chicken from the marinade and grill or pan-sear for about 6-7 minutes per side until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat, let it rest for a few minutes, then shred into bite-sized pieces.

      Prepare the Flatbreads: While the chicken is resting, preheat your oven to 400°F (200°C). Place the flatbreads on a baking sheet lined with parchment paper.

        Assemble the Flatbreads: Evenly distribute the shredded chicken over each flatbread. Drizzle additional BBQ sauce over the chicken (optional). Sprinkle the mozzarella cheese on top, followed by sliced red onions and corn.

          Bake: Place the assembled flatbreads in the oven and bake for 10-12 minutes, or until the edges are crispy and the cheese is bubbly and slightly browned.

            Garnish and Serve: Remove from the oven and top with freshly chopped cilantro. Add sliced jalapeños if you want to spice it up. Slice into pieces and serve warm.
