1 lb boneless, skinless chicken thighs

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Sour cream or Greek yogurt, for topping (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until the chicken is evenly coated. Let it marinate for at least 30 minutes (or refrigerate for up to 2 hours for more flavor).

    Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes per side or until the chicken is golden brown and cooked through (165°F internal temperature). Remove from the skillet and let it rest for a few minutes before slicing into strips.

      Sauté the Vegetables: In the same skillet, add the sliced red and green bell peppers and onion. Sauté for about 5-7 minutes or until they are tender and caramelized. You can add a pinch of salt for extra flavor if desired.

        Warm the Tortillas: While the vegetables are cooking, warm the tortillas in a separate skillet or microwave until soft and pliable.

          Assemble the Tacos: On each tortilla, add a generous amount of chicken strips, followed by the sautéed vegetables. Top with shredded lettuce, diced tomatoes, avocado slices, and a sprinkle of fresh cilantro.

            Serve: Squeeze fresh lime juice over the tacos and add a dollop of sour cream or Greek yogurt, if using. Serve immediately with lime wedges on the side.
