2 cups cooked chicken, shredded (preferably rotisserie chicken)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 cup diced bell peppers (any color)

1/2 cup diced red onions

2 cloves garlic, minced

1 tablespoon taco seasoning

4 large flour tortillas

2 tablespoons olive oil or butter

Fresh cilantro, chopped (for garnish)

Salsa and guacamole (for serving)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, cream cheese, sour cream, diced bell peppers, red onions, minced garlic, and taco seasoning. Mix until all ingredients are thoroughly combined.

    Heat the Tortillas: In a large skillet over medium heat, add 1 tablespoon of olive oil or butter. Once hot, place one tortilla in the skillet. Cook for 30 seconds until warm and pliable. Remove from the skillet and set aside. Repeat with remaining tortillas.

      Assemble the Quesadillas: Take one tortilla and spread a generous layer of the chicken mixture onto half of the tortilla. Fold the tortilla in half over the filling. Repeat with the remaining tortillas and filling.

        Cook the Quesadillas: In the same skillet, add more olive oil or butter if needed. Place the folded quesadilla into the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy. Press down gently with a spatula to ensure even cooking and to help the cheese melt.

          Slice Into Wedges: Once cooked, remove the quesadilla from the skillet and let it rest for a minute. Use a sharp knife or pizza cutter to slice each quesadilla into wedges.
