Crispy Chicken Taco Quesadillas

2 cups cooked chicken, shredded

1 cup sharp cheddar cheese, grated

1 cup Monterey Jack cheese, grated

1 cup taco seasoning (store-bought or homemade)

1/2 cup salsa

1/2 cup sour cream (for serving)

1 fresh jalapeño, diced (optional)

8 large flour tortillas

1/4 cup olive oil (for frying)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken Mixture: In a bowl, combine the shredded chicken, taco seasoning, salsa, and diced jalapeño (if using). Mix until well combined.

    Heat a Skillet: In a large non-stick skillet over medium heat, add 1 tablespoon of olive oil and let it warm.

      Assemble the Quesadillas: Take one flour tortilla and layer half of it with a generous amount of the chicken mixture, followed by a mix of cheddar and Monterey Jack cheese. Fold the tortilla in half to encase the filling. Repeat for the remaining tortillas.

        Cook the Quesadillas: In the preheated skillet, add an additional tablespoon of olive oil and carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until it’s golden brown and crispy.

          Flip: Using a spatula, carefully flip the quesadilla to the other side and cook for another 3-4 minutes, until it’s also golden brown and the cheese is melted.

            Repeat Cooking Process: Remove the cooked quesadilla from the skillet and keep it warm in a low-heat oven (around 200°F/93°C). Add more olive oil to the skillet as needed and continue cooking the remaining quesadillas.

              Slice and Serve: Once all quesadillas are cooked, cut each into wedges and garnish with fresh cilantro. Serve warm with sour cream and lime wedges on the side for drizzling.
