1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

6 cups romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)

1/4 cup Caesar dressing (store-bought or homemade)

1/4 cup croutons (optional, for extra crunch)

Freshly cracked black pepper, for serving

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare Chickpeas: In a bowl, combine the drained chickpeas, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until the chickpeas are evenly coated.
