Crispy Chickpea Wraps

Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

1/2 teaspoon sea salt

1/4 teaspoon black pepper

6 whole wheat wraps or tortillas

1 cup mixed greens (spinach, arugula, or kale)

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/2 cup tzatziki sauce (store-bought or homemade)

Fresh lemon juice for drizzling

Optional: crumbled feta cheese or vegan feta

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chickpeas: In a medium bowl, toss the rinsed and drained chickpeas with olive oil, smoked paprika, garlic powder, cumin, sea salt, and black pepper until they are well coated.

      Roast the Chickpeas: Spread the seasoned chickpeas out in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy. Make sure to shake the pan halfway through cooking for even crispiness.

        Warm the Wraps: While the chickpeas are roasting, warm the whole wheat wraps or tortillas in a skillet over low heat for about 1-2 minutes on each side, or until they are pliable.

          Assemble the Wraps: Once the chickpeas are crispy, remove them from the oven and let them cool slightly. On each warm wrap, layer a handful of mixed greens, cherry tomatoes, diced cucumber, and red onion.

            Add Chickpeas and Tzatziki: Spoon a generous amount of crispy chickpeas onto each wrap, drizzle with tzatziki sauce, and squeeze fresh lemon juice over the top. If desired, sprinkle crumbled feta cheese.

              Roll it Up: Carefully roll each wrap, tucking in the sides as you go to prevent filling from spilling out.
