Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

1 cup cornflour (cornstarch)

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon ginger powder

1/2 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon red food coloring (optional for color)

Oil for deep frying

2 tablespoons vegetable oil (for stir frying)

For the sauce:

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

2 teaspoons sesame oil

2 tablespoons chili paste or sauce (adjust to taste)

2-3 green chilies, finely chopped

1 teaspoon sesame seeds (for garnish)

Spring onions, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the chicken pieces, garlic powder, ginger powder, black pepper, and salt. If using, add the red food coloring for a pop of color. Mix well and let it marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Breading: In a shallow bowl, mix the cornflour and all-purpose flour. In another bowl, beat the eggs.

      Coat the Chicken: Take each piece of marinated chicken, dip it first into the egg mixture, and then coat it evenly with the flour mixture. Shake off any excess flour.

        Deep Fry the Chicken: In a deep frying pan or pot, heat enough oil to submerge the chicken pieces. Once the oil is hot (around 180°C or 350°F), carefully add the coated chicken in batches. Fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

          Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and chili paste. Adjust the amount of chili paste according to your desired heat level.

            Stir Fry: In a separate pan, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped green chilies and stir-fry for about 30 seconds until fragrant. Pour in the sauce mixture and let it simmer for about 1 minute.

              Combine: Add the crispy chicken pieces to the sauce. Toss well to coat all the chicken evenly with the sauce. Cook for an additional minute until everything is heated through.

                Serve: Transfer the crispy chilli chicken to a serving platter. Garnish with sesame seeds and chopped spring onions.
