4 large eggs

100g feta cheese, crumbled

1 small onion, finely chopped

1 bell pepper (any color), diced

1 cup fresh spinach, roughly chopped

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large tortillas (flour or whole wheat)

Optional toppings: sliced avocado, salsa, or hot sauce

Instructions
 

Prep the ingredients: Gather all your ingredients. Chop the onion, bell pepper, and spinach. Crumble the feta cheese.

    Cook the vegetables: In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until soft, about 4-5 minutes. Add the spinach and cook for an additional 1-2 minutes, or until wilted. Season with salt and pepper.

      Make the egg mixture: In a bowl, whisk together the eggs, smoked paprika, a pinch of salt, and pepper until well combined. Gently fold in the crumbled feta cheese.

        Cook the eggs: In the same skillet, add another tablespoon of olive oil (if needed), then pour in the egg and feta mixture. Cook on low-medium heat, gently stirring until the eggs begin to set but are still slightly runny. Remove from heat when the eggs are just set and still fluffy.

          Assemble the wraps: Lay a tortilla flat on a plate. Spoon the egg-feta mixture onto the center of the tortilla. Fold in the sides, then roll from the bottom to encase the filling.
