Ingredients

1 large head of cauliflower, cut into bite-sized florets

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and black pepper, to taste

1/4 cup grated Parmesan cheese (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, salt, black pepper, garlic powder, and smoked paprika until evenly coated.

Melt the Butter: In a small saucepan over medium heat, melt the butter. Once melted, add the minced garlic and dried Italian herbs. Sauté for about 1-2 minutes or until the garlic is fragrant and slightly golden, being careful not to burn it.

Combine: Pour the garlic butter mixture over the seasoned cauliflower florets and toss until each piece is well coated.

Roasting: Spread the cauliflower in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, turning halfway through, until the cauliflower is golden brown and crispy.

Final Touch: Once out of the oven, immediately sprinkle the Parmesan cheese over the hot cauliflower if using, and toss gently. This step will ensure the cheese melts slightly and sticks to the cauliflower.

Garnish and Serve: Transfer the crispy garlic butter cauliflower to a serving platter, garnish with chopped parsley, and serve with lemon wedges on the side for a fresh kick.
