1 teaspoon paprika

1 teaspoon dried thyme

Prep the Potatoes: Begin by washing and peeling the russet potatoes. Cut them into even cubes (about 1-inch in size) to ensure uniform cooking.

    Parboil: Bring a large pot of salted water to a boil. Add the potato cubes and cook for about 5-7 minutes, or until you can easily pierce them with a fork but they are not fully cooked. Drain and let them cool slightly.

      Preheat Oven: While the potatoes are cooling, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy clean-up.
