Ingredients

2 pounds baby potatoes, halved

6 tablespoons unsalted butter

6 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried)

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon red pepper flakes (optional, for a bit of heat)

2 tablespoons freshly grated Parmesan cheese (optional, for added flavor)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature is crucial for achieving that tasty crispy exterior.

Boil the Potatoes: In a large pot, add the halved baby potatoes and cover them with cold water. Add a generous pinch of salt. Bring the water to a boil and cook the potatoes for about 10-12 minutes, or until they are fork-tender but not falling apart. Drain them and let them cool slightly.

Prepare the Garlic Butter: In a medium saucepan, melt the unsalted butter over medium heat. Add the minced garlic, rosemary, thyme, sea salt, black pepper, and red pepper flakes (if using). Stir frequently and cook for around 2-3 minutes until the garlic is fragrant but not browned.

Smash the Potatoes: On a baking sheet lined with parchment paper, place the boiled potatoes cut side up. Using a sturdy fork or a potato masher, gently smash each potato until it’s flattened but still intact.

Coat in Garlic Butter: Pour the prepared garlic butter mixture evenly over the smashed potatoes, ensuring they are well coated. If desired, sprinkle freshly grated Parmesan cheese over the top for extra flavor.

Roast the Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 25-30 minutes, flipping them halfway through. You want them to turn golden brown and crispy on the outside.

Garnish and Serve: Once the potatoes are crispy and golden, remove them from the oven. Garnish with fresh chopped parsley for a pop of color. Serve immediately while hot and enjoy your delicious crispy garlic butter potatoes!
