3 tablespoons olive oil

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup Parmesan cheese, grated (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, salt, pepper, garlic powder, and smoked paprika. Toss until the sprouts are evenly coated.

      Make the Dressing: In a small bowl, whisk together the honey, Dijon mustard, and apple cider vinegar until smooth.

        Combine: Pour the honey mustard dressing over the seasoned Brussels sprouts and toss well to ensure each sprout is evenly coated.

          Roast the Sprouts: Spread the Brussels sprouts out in a single layer on the prepared baking sheet. Make sure they are not overcrowded for optimum crispiness. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.
