For the Chicken:

1 lb boneless, skinless chicken thighs

1/4 cup soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon honey

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated ginger

Salt and pepper to taste

1/2 cup cornstarch (for coating)

Oil for frying

For the Slaw:

1 cup green cabbage, finely shredded

1 cup carrots, grated

1/4 cup green onions, chopped

2 tablespoons rice vinegar

1 tablespoon sesame seeds

Salt to taste

For the Tacos:

4 pita bread rounds

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, mix together the soy sauce, gochujang, honey, sesame oil, garlic, ginger, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for better flavor.

    Prepare the Slaw: In a mixing bowl, combine the shredded cabbage, grated carrots, green onions, rice vinegar, sesame seeds, and a pinch of salt. Toss until everything is well combined. Set aside to allow flavors to meld.

      Fry the Chicken: Heat oil in a skillet over medium-high heat. Remove the chicken from the marinade and coat each piece with cornstarch, shaking off any excess.
